What? No flour pancakes? How is that even possible?! Well, it is!
Our eating certainly has changed- with so many allergies and food intolerances on the rise, we are always searching for recipes to suit our specific dietary needs.
So, I began my hunt for gluten free pancake recipes and came across this 2 ingredient recipe from Kidspot. (www.kidspot.com.au)
These 2 ingredient pancakes are perfect for children who cannot tolerate gluten. And using banana as a key ingredient is a clever way to sneak in a healthy, nutrient rich fruit.
- 3 small ripe bananas
- 3 eggs, lightly beaten
Step 1. Mash bananas well.
Step 2. Whisk in eggs until well combined.
Step 3. Heat a non-stick frying pan over a low-medium heat. Pour in 1/3 of a cup of the batter. Cook until bubbles form all over the surface and flip. Cook a further 1-2 minutes and serve.
