Asparagus Tart recipe

30 ml butter or margarine
45 ml Snowflake cake flour
250 ml milk
3 extra-large eggs, beaten
500 ml (200 g) grated Cheddar cheese
430 g can asparagus salad cuts, drained
1. Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for about 1 minute. Add milk and cook over medium heat, whisking constantly, until sauce is smooth and has thickened. Remove from heat and leave to cool slightly.
2. Add beaten eggs, cheese, and seasoning and whisk until smooth. Add asparagus.
3. Spoon mixture into a medium, greased ovenproof dish. Sprinkle with cayenne pepper.
4. Bake in a preheated oven at 180 °C for about 40 minutes until set and golden brown. Sprinkle with chopped thyme, just before serving.
Substitute asparagus with tuna, kernel corn or fried bacon.
