Coconut ice

Old fashioned concept but loved by the kiddies. This is a nice, easy recipe and you can colour it using any coloured food colouringto match a party scheme. My 3 year old had some and is still asking me for it.

It brought back great childhood memories for me too.. Try it..


160ml sweetened condensed milk

2 cups icing sugar

2 cups dessicated coconut

2-4 drops food colouring (standard is pink or red but any colour will do)


  1. Sieve the icing sugar.
  2. Now add the coconut and condensed milk to the icing sugar and mix together until well combined.
  3. Divide the mixture in half and to the one half add the food colouring and mix well.
  4. Press the white mixture into the base of a square pan or even a plastic lunchbox.
  5. Now spread and press the pink mixture over the white mixture.
  6. Place in the fridge so that it can harden.
  7. Once it has set, cut into small squares.
